Feta and Onion Spring Rolls
Years ago, we were at a party in Hong Kong that was catered. I don't remember much of the party I think because the wine was free, but I do remember the chef made these real fluffy pastry shells with sweet onion and feta cheese. Next day, I began to attempt a recreation, but with an Asian twist. Instead of using pastry crust I used spring roll wrappers. Fantastically simple and no matter how many I make they are always devoured.
