Feta and Onion Spring Rolls
Years ago, we were at a party in Hong Kong that was catered. I don't remember much of the party I think because the wine was free, but I do remember the chef made these real fluffy pastry shells with sweet onion and feta cheese. Next day, I began to attempt a recreation, but with an Asian twist. Instead of using pastry crust I used spring roll wrappers. Fantastically simple and no matter how many I make they are always devoured.

Ingredients
  • 1 pkg - Spring Roll Wrappers
  • 2 Onions I use red / videlia but you can choose whatever kind you want
  • 1 lb Feta Cheese best if you can get the crumbled type but if you can only get a block then just chop it to small pieces
  • 4-8 tbls Sugar add to taste

Instructions
  1. Slice the onion fairly thin and cook down in pan. About half way through the cook down process add the sugar. The sugar will begin to melt into the pan and coat the onion. Remove from heat and allow to cool.
  2. Next take spring roll wrappers and peel apart. Work fast or keep the wrappers covers with damp cloth so they do not dry out. place equal amounts of cheese and onions into wrap and roll up as you would a spring roll. Place on pan and cook at 400 until golden brown.
